Product description

Characteristics of the Carabinero shrimp

The red giant deep sea shrimp from the Mariscos Calafate fishery is caught wild off the coast of Morocco in small fishing boats.

The meat of the shrimp is located in the tail of the animal, which does not mean that the head and breast parts are not worth paying attention to. This is where the intense taste lies.

They are ideal for preparing clear and creamy soups and sauces, to which they give flavor and their red color. The Carabinero is rightly a long-time favorite in international kitchens.

Frequently asked questions

What is the difference between whole carabineros and headless carabineros?

When it comes to the whole carabinero, the key to one of the most intense flavors in seafood cuisine lies not only in the tender, firm and juicy meat of the tail, but also in the head and breast. This can be used to make an intense broth that takes pasta, risotto or sauces to a whole new level.

If you prefer to focus entirely on the pure, noble meat, choose the practical version without the head - perfect for uncomplicated enjoyment without much effort.

What are carabineros?

Carabineros are deep red giant shrimp from the eastern Atlantic that live at depths of up to 2000 meters. They owe their striking color to a special genetic feature. Their strong taste, firm meat and bright color make them a real delicacy that also delights professional chefs.

How do I peel carabineros?

First, carefully twist off the head - but be sure to keep it, as it is full of flavor for sauces or stocks. Then gently press into the shell at the end of the tail and peel it off piece by piece. Finally, if desired, cut the back of the shrimp slightly with a sharp knife and pull out the dark intestinal thread.

How are the carabineros delivered?

Our carabineros are delivered to you frozen - in our highly efficient thermally insulated recycling boxes with dry ice, so that the cold chain from the sea to your home remains unbroken. You can defrost and prepare them straight away or simply store them at -18 °C.

How do carabinero shrimp taste compared to other shrimp?

Carabineros are in a league of their own. While shrimp or North Sea crabs tend to be mild and subtle, carabineros have a strong, slightly sweet and pleasantly nutty aroma.

What dishes do carabineros go well with?

Carabineros are very versatile: Raw as a fine ceviche or sashimi, they develop their delicate aromas. On the grill or in a pan, they develop roasted flavors with depth. The shells? Definitely use them - they give every pasta, bouillabaisse or risotto that extra kick.
