Product description

Pork fillet from Bavaria

We source our pork fillet from organic forest pigs near Rosenheim. The animals grow up free-living in species-appropriate conditions and enjoy freedom at all levels: With 500-1000 m² of space per pig and the opportunity to decide for themselves what type of food they prefer or whether they want to spend time in the forest or on pasture, for example, the animals' welfare is the focus.

The concept behind the Bavarian organic forest pigs combines traditional, historical forms of husbandry with modern, contemporary approaches to feeding and farming. This ensures exceptional meat quality and a particularly intense taste of the fillet.

The noblest piece of forest pork

The species-appropriate, stress-free husbandry of the forest pigs, combined with lots of movement and a balanced nutrition ideally suited to them, gives the meat an intense aroma and a delicate marbling of fat, which makes it particularly succulent. The fillet of Bavarian organic forest pork has a delicate taste and is particularly appreciated by gourmets. It is ideal for elegant dishes where the tenderness of the meat is paramount and is perfect for quick cooking methods such as short roasting, sous-vide but also for braised dishes.

Origin

We source the meat from forest pigs from a family-run business in Rosenheim that focuses on sustainable and animal-friendly husbandry. The idea originally arose from a research project that examined the behavior, health and meat quality of domestic pigs in the forest as part of a dissertation. The idea was developed further and now involves 20 hectares of woodland - a traditional form of forest use in which forests serve as natural grazing areas and eliminate the need for extensive clearing or the establishment of grassland. The animals live at three locations in Bavaria, and another location near Magdeburg is already being planned. From an early age, the pigs enjoy generous living space of 500 to 1000 square meters per animal, where they can roam freely, explore and pursue their natural behavior. These Bavarian organic forest pigs combine species-appropriate, historical husbandry with modern knowledge of feeding and care. Furthermore, the Swabian-Hall breed is known for its robustness and excellent meat quality.
