Loch Duart is synonymous with Scottish salmon from responsible aquaculture. Since the 1990s, the company has been committed to raising salmon in a manner that is as close to nature as possible and sustainable. This is based on an exclusive heritage strain that is directly descended from Scottish wild salmon and has been carefully refined over decades.


The fish are raised in secluded sea lochs in the Scottish Highlands—with low stocking densities, plenty of space to swim, and without the use of antibiotics or growth promoters. This sustainable salmon farming ensures healthy fish and a natural, rich flavor.


After being caught, the salmon is processed with the utmost care using the Ikejime method. This method minimizes stress and ensures a clean, pure flavor and a particularly firm texture. Combined with rapid processing, the result is Scottish salmon that stands out for its exceptional quality.

  • The quick version - for those who decide at short notice: If you are in a hurry, it is possible to defrost this product in a water bath within 1 hour. The water should be cold to lukewarm.

Origin

Loch Duart salmon comes from the remote sea lochs of northwest Scotland—a region characterized by a rugged Atlantic coastline, cold, clear water, and strong tidal currents. These natural conditions ensure constant movement and slow growth, allowing the salmon (Salmo salar) to develop a firm muscle structure and a particularly pure flavor.
Unique to Loch Duart is its own heritage breed: directly descended from Scottish wild salmon and carefully preserved for over 25 years. Only selected fish with distinct, wild-type characteristics are bred, ensuring that the quality of this line is reflected to this day in texture, appearance, and flavor. The fish are raised in spacious tanks with very low stocking densities—completely free of antibiotics or growth promoters.
After harvest, the fish are gently stunned according to the Japanese Ikejime method and processed before rigor mortis sets in. This combination of origin, breeding, and artisanal care ensures exceptional freshness, a firm, succulent texture, and a clear, unadulterated flavor.

Diese Gericht brauch nur wenige Zutaten wie, ein guten andalusischen Olivenöl, Salz, Madagaskar Pfeffer, Limette und der liebling Soya sauce von Jamie Oliver. Ich danke Euch!
