The French term "entrecôte" describes the exact location of the meat. The French "entre" means "between" and "Côte" is the French word for "bone". The intercostal piece, also known as the "high rib", is particularly heavily marbled and is known for the distinctive fat eye. It is very heat-resistant and particularly tasty.
