It is best to leave them to defrost overnight in the fridge - this keeps the texture tender and the flavor as intense as ever. If you need to go faster: a cold water bath defrosts them in about an hour - make sure that the pack remains sealed to preserve quality and hygiene.

How do frozen carabineros differ in taste from fresh ones and why should I buy frozen ones?

Quite simply, because “fresh” does not always mean really fresh. Our carabineros are shock-frozen at -40 °C immediately after being caught. This preserves the structure, color and, above all, the intense nutty flavor perfectly. You get real deep-sea freshness on your plate, are more flexible in your planning - and also help to prevent food waste.

What is the best way to prepare carabineros?

It is best to let the quality of these fine shrimp speak for itself. The purist approach works wonderfully: briefly grilled or seared in a pan until the meat is just cooked and remains tender. For brave gourmets, carabineros are also an experience raw - as a fine tartare or as ceviche with a little acidity.
