In the depths of the Mediterranean, around 700 meters below sea level, it lives in absolute seclusion and develops its unmistakable, sweetish taste. Prepared as a fine carpaccio, the Gambero Rosso reveals its full aroma.

Carpaccio enjoyment quickly prepared


Even when almost perfect, the Carpaccio di Gambero Rosso is quickly prepared as a delicious delicacy. Carefully remove the carpaccio from the packaging and peel off the protective paper on one side. Place it on a plate and remove the remaining foil. Leave to defrost at room temperature for about 10 minutes. Then season it to your taste. Classically, salt, pepper, good olive oil and, for example, a leaf of basil are recommended. If you want to impress your guests, you can also top it with caviar and yuzu vinegar.

Origin

The Latin technical term used for the Gambero Rosso is Aristaeomorpha foliacea. The ruby red delicacy is fished with trawls (FAO 37. 2. 2) and immediately frozen on the fishing boat to preserve the unique taste of the deep sea in sashimi quality.
