  • The quick version - for those who decide at short notice: If you are in a hurry, it is possible to defrost this product in a water bath within 1 hour. The water should be cold to lukewarm.

Origin

Sustainable breeding in the Kyuquot Sound
The breeding facilities in Kyuquot Sound create optimal conditions for the black cod. In net cages that reach a depth of up to 40 meters, the fish can grow in a calm, stress-free environment and under natural light conditions. In contrast to conventional aquaculture, only a very low stocking density is used here so that the fish have enough space. This is an essential factor in their high quality.

Harvesting with sensitivity
With the help of air lift pumps, the fish are gently transported from the depths to the surface to reduce stress. The animals are pneumatically stunned to ensure optimal meat quality. Manually cutting the gills ensures that the fish bleed out completely while their hearts are still beating.
