Product description

Black Cod: a fusion of taste, texture and sustainability

Dive into the world of exquisite Sashimi Grade Black Cod. This incredibly versatile fish is not only perfect as sashimi, but also for roasting on the skin or for modern cooking methods such as steaming.

Our Black Cod comes from the sustainable farms in Kyuquot Sound, a virtually untouched area in West Vancouver. Here, surrounded by species-appropriate conditions and social responsibility, the Black Cod thrives in deep darkness and free space. The KYOQUOT SOUND Black Cod sets new standards in terms of quality and sustainability – an unparalleled combination of culinary pleasure and environmental awareness.

Black cod, also known as sablefish, is much more than just a fish. Celebrated in Japan as a sashimi highlight, it offers a delicate balance between buttery taste and velvety texture. The farming methods used in what is probably the most advanced aquaculture in Canada guarantee a quality that far surpasses that of wild-caught Black Cod.

Origin

Sustainable origin in Kyuquot Sound
The breeding facilities in Kyuquot Sound offer the Black Cod ideal living conditions. In nets that reach up to 40 metres deep, it experiences stress-free growth and authentic darkness. Compared to conventional aquacultures, the stocking density is only a fraction of that required to give the fish sufficient space - a decisive factor for their quality.

Harvesting with flair:
The harvesting methods were developed by Japanese engineers and specialists. Air lift pumps gently transport the fish from the depths to minimize stress. The animals are pneumatically stunned to ensure first-class meat quality. Hand-cut gills ensure complete bleeding when the heart is still beating.
Social responsibility in Kyuquot SoundThe farms in Kyuquot Sound not only create excellent fish, but also job opportunities for the members of the First Nation Kyuquot & Checleseth. HONEST CATCH always strives for culinary enjoyment with social responsibility - for a sustainable future and a taste experience that is second to none.
