Origin

The Latin technical term for the Gambero Rosso is Aristaeomorpha foliacea . The ruby-red delicacy is fished with trawl nets (FAO 37.2.2) and frozen directly on the fishing boat to preserve the unique taste of the deep sea in sashimi quality.
