  • 1 large orange (organic)
  • 4 tablespoons butter
  • 1 sprig of fresh sage leaves
  • 1 tsp salt
  • 1 tsp black pepper

Preparation

  1. For each salmon fillet, cut about 2 large slices about 1 cm thick from the orange
  2. Heat the grill to 180 - 200°C.
  3. Place a small pot on the grill and melt a tablespoon of butter in it. Add 2 chopped sage leaves, ½ teaspoon salt, ½ teaspoon pepper, red peppers, the juice of the remaining orange, the remaining butter and some orange zest. Stir until melted and combined. Take the pot off the grill.
  4. Season the salmon fillets on both sides with ½ teaspoon salt and ½ teaspoon pepper.
  5. Place the orange slices on the grill so that you can place the salmon fillets on top and then place the fish on top of the orange slices. Spoon some of the orange butter sauce over the top. Close the lid and grill everything for 10 minutes.
  6. Open the grill lid. Spoon more butter sauce onto the fish. Place the remaining sage leaves aside on the grill. Close the lid and grill for another 5 minutes.
  7. Place the salmon fillets on a serving plate. Drizzle the remaining sauce over the top. Sprinkle everything with the remaining orange peel and the crispy sage leaves.
