The topside is obtained from the front, triangular tip of the hip cover - hence the name. There is a thick layer of fat on the top, which can be clearly seen in the cut. While this is often removed from classic boiled beef, in Brazilian BBQ, for example, it is left in one piece to intensify the taste. Skewered as so-called churrasco skewers, it is a particularly tasty delicacy.

  • The quick version - for those who decide at short notice: If you are in a hurry, it is possible to defrost this product in a water bath within 1 hour. The water should be cold to lukewarm.
