Defrosting instructions :

  • Carefully remove the protective paper from one side. Place the carpaccio on the plate and remove the remaining foil. Leave to defrost at room temperature for 10 minutes.

Carpaccio di Gambero Rosso: The Latin scientific name of the Gambero Rosso is Aristaeomorpha foliacea. This ruby-red delicacy is caught in the Adriatic Sea (FAO 37.2.1) using trawls and frozen immediately on board the fishing vessel to preserve the unique flavor of the deep sea in sashimi quality.
