What is the difference between cold-smoked, warm-smoked and graved salmon?

Cold-smoked salmon is smoked at low temperatures (approx. 15-25 °C) for several hours to days. It remains soft, has a delicate texture and a mild smoky flavor. Warm-smoked salmon is cooked and smoked at higher temperatures (50-85 °C). It is firmer, juicier and has a more intense smoky flavor. Graved salmon is marinated and fermented with salt, sugar and herbs (usually dill). The mildly spicy, tender graved salmon is then briefly dried in a smoker.

What are the advantages of frozen smoked salmon?

Frozen smoked salmon offers a longer shelf life without compromising on taste or quality. Freezing preserves the fine texture and valuable nutrients, especially the omega-3 fatty acids. The salmon also remains particularly fresh thanks to the continuous refrigeration. Another advantage is the flexibility in storage: frozen salmon can be stored for months and is quickly available at any time.

How long can smoked salmon be kept?

Smoked salmon generally has a longer shelf life than fresh salmon, as it is preserved by the smoking process. The exact shelf life depends on the type of processing and storage. Vacuum-packed smoked salmon usually stays fresh in the fridge for two to three weeks, while frozen smoked salmon can be enjoyed for several months. Our Ora King smoked salmon, for example, can be eaten for up to three months if it is kept correctly chilled. Once opened, smoked salmon should be consumed within a few days to ensure the best quality and taste.

Is smoked salmon healthy?

Smoked salmon is a nutrient-rich source of protein and contains valuable omega-3 fatty acids, which have a positive effect on the cardiovascular system and have anti-inflammatory properties.
